Turning on and priming:
1. If reservoir model, rinse and fill the reservoir. If plumbed in version, connect and open
water supply (water softener and water pressure regulators requirements are covered
separately)
2. Plug the machine in and turn the switch to position “I” (one). The Power light on far right
will come on. NOTE: Setting the rotary switch to position “I” will activate all the
functions of the machine such as the autofill circuit, power to the PID, power to the
pump, solenoid valve, microswitch for the lever and power the brew boiler heating
element (but not the steam boiler heating element). The machine should arrive with the
PID turned off and it is very important for the PID to remain OFF until both of the boilers
are primed. When the PID is OFF, there is no power supplied to the brew boiler heating
element.
Upon turning the switch to position “I” the display will turn on and show the software
version (ex. 1.00). Then after few seconds, the word OFF will appear. If OFF is not
displayed and you see a temperature reading instead, immediately push and hold the right
side button on the PID to turn it off.
3. Within a few seconds the autofill should turn on (you will hear the pump) and the steam
boiler will fill until the proper level is reached. For reservoir models keep an eye on the
water reservoir and make sure that the water level is going down.
4. It is possible that the steam valve and hot water spout have been opened for shipping,
especially in the winter months to avoid freezing issues. If they are open, now is a good
time to close them. However, if they arrived closed, now is a good time to open them to
release negative/cold air that may have accumulated in the boiler.
5. After the steam boiler’s autofill is completed, engage the grouphead lever (pump will
start again). Allow a few ounces of water to flow out the group, and then turn the lever
down (off).
Now both of the boilers of your machine are primed.
6. At this point, turn the PID ON by pushing and holding the right button. The word OFF
will disappear and the PID will start reading brew boiler temperature. For the US market,
the default temperature reading is in degrees F. If you prefer degrees C it can easily be
changed with the instructions we will cover further along.
7. The steam boiler can now be turned on by turning the switch to position II (the left light
will come on indicating that power is passing through the pressurestat and reaching the
heating element).

NOTES regarding the steam boiler: it takes about 5 minutes for the steam boiler to reach
temperature. The steam boiler also provides hot water to the water spout. During warm up, it is
normal to hear the anti-vacuum valve hissing until enough pressure has built inside the boiler to
shut the valve.
8. Once the pre-set pressure has been reached, the pressurestat will terminate power to the
heating element and the left light will go OFF. Let out a couple of steam bursts and you
are ready to steam milk.
Thanks to the double-boiler technology, there are separate circuits within the machine for heating
the brew boiler and the steam boiler. Personally, I recommend leaving the power switch in
position “I” (thus NOT connecting disengaging the steam heating element) unless you are
preparing to steam milk or lengthen shots with hot water (Americano).
There are a few advantages to leaving an unused steam boiler off:
Less maximum electricity consumption (600w versus 1600w)
Less heat dispersion into the ambient
Less wear and tear on some components
Safer if you intend to put your machine on a timer.
PID Function:
Although the PID is pre-set by the factory, one convenience of the double boiler machine is that
you can customize your brewing temp without sacrificing steam pressure. (PID vs. pressurestat.)
WARNING: you can really mess up the settings, so if you have to change some parameters, make
sure you jot down the original settings in your owner’s manual before following these steps:
Changing from C to F or vice versa:
1. Turn the machine off
2. While holding both buttons of the PID (- & +), turn the machine back on.
3. Keep holding the buttons. The display will show the software version (ex. 1.00)
4. In 3 seconds, the display will show F03. You are now in programming mode.
5. Release both buttons and push the right button until the display shows F.
6. Stop pushing buttons. After 3 seconds, the display will go back to F03.
7. You are now in F. Turn machine off and back on.
To scroll from F to C push the RIGHT button until the desired value is shown.
WARNING: IF YOU TOUCH THE LEFT BUTTON WHILE IN PROGRAMMING MODE,
YOU WILL MODIFY THE PID PARAMETER, MAKING THE MACHINE FUNCTION
IMPROPERLY.
IF you must modify the PID values, then once in the F03 mode:
1. Push the left button; display will show P.
2. Once P is displayed, push the right button.
3. The set value will show (ex 1.8).

4. With the left or right button you can move it up or down.
5. Once the desired value is reached, stop pressing buttons. The value will be memorized,
and the display will go back to show P.
To move to the next value:
1. Push the left button; display will show I.
2. Repeat steps 2 – 5 above.
Move on to D
Once done, push the left button again until F03 is displayed. Turn main switch off and back on.
The new parameters are now active in your PID.
NOTE for plumbed-in units ONLY:
After installing the water softener and a pressure regulator (where needed), the water gauge
(right gauge) should read 2-4 bars when idling. If your gauge reads above 4 bars, you must
install a water pressure regulator (before the water softener). Water pressure with the lever
activated (lifted into brewing position) should be 8.5 bars without the portafilter or with the
portafilter empty. If your reading is below or above 8.5 bars, you should adjust the PUMP.
(Again: this is for the pump, not the by-pass valve). Once you have the coffee grind correct, the
reading will be 9 bars (also with the blind filter).
To adjust Pump pressure:
1. Shut off water supply and unplug machine.
2. Remove the casing (6 screws).
3. Locate the brass cap nut on the pump (see picture).
4. Position a sponge or towel underneath the pump’s nut.
5. Unscrew and remove the cap nut (some water will leak).
6. Using a flat blade screw driver, turn the adjusting nut one
complete turn clockwise.
7. Reinstall the cap nut.
8. Open water supply and plug in machine.
9. Simulate a shot (with or without inserting the portafilter). The pressure should reach 8.5
bars. If not, repeat from step 1 and adjust pump screw until desired value is reached.
10. Once pump pressure is reached, insert the blind filter and simulate a backflush. At
approximately 9 bars, the bypass valve should open and release excess water into the
reservoir. If the by-pass valve opens before or after 12 bars and release water in to the
drip tray, adjust the by-pass valve following the main manual’s instructions.
11. NOTE: It is normal while pressure is building up (when the heating elements are
powered) the water pressure will reach 12 bar and the discharge valve will release
excessive water in to the drip tray.
